My name is Jonathan Guerrero Itchon.  During the last two years, it's been on my brain that I should write about my journey living a gluten-free (GF) and dairy free (DF) life.  I'm finally embarking on that journey, and while I'm beyond excited, I'm also relieved.  You know when you want to tell a story to everyone you meet, but there are too many words, not enough time, and you don't know where to begin?  That's how it's been for me, so eager to tell this story.

Now, I know where to begin.

I've been GF for nearly four years and DF for three, and the change it has brought to my life has been nothing short of amazing.  A complete turnaround, and that is not an exaggeration.  Many of you know what I mean.  And even though there is so much more information and awareness these days, there are many who still don't have access to it.  It might just be a matter of asking a few questions or doing a little research, but what if you don't even know what questions to ask or where to start?  Or are afraid of the answers?

I was that person, when the discovery of my gluten intolerance hit me over the head (read all about it in My Story).  But I can tell you, during my time at the school of hard knocks, I have learned a LOT, about what it means to be a "canary," and how to make the most of your life through mindful eating and positive thinking.  And while that may have been the path I took, with a do-it-yourself mentality, making a lot of mistakes in the process - that doesn't have to be the case for everyone.

In the end, I want this blog to help all of us living the lives of a "canary" to create a community where we can help each other, whether it be sharing recipes, grocery shopping tips, how to navigate the holidays, or where to eat when you're on vacation.  There are a lot of us "canaries" in the world, and while strength can be found in numbers, I think we can all agree that it's still difficult.  And for those of you who aren't food sensitive but are trying to offer support to someone in your life who is, it can get really tricky.  I know that.  But together we can make living a "particular" lifestyle in a not so particular world that much easier and rewarding.  Both for us, and for those we love.

We needn't feel caged - we are free to sing and we are free to fly.  But it is up to us.  :)
